Celebrating St-Patricks Day with an edible rainbow

Rainbow desserts are so popular what better occasion to make one than on St-Patricks day. 
I've been meaning to test out the following products and thought this would be the perfect occasion.

Here is the complete step-by-step video tutorial to create these adorable Rainbow Whoopie Pies yourself.

This is the buttercream that I used to fill the mini whoopee pies.

Ingredients Whoopie Pies
1 c unsalted butter, room temperature 1 ½ c sugar 3 large eggs 1 vanilla bean, split lengthwise 1 ½ tsp vanilla extract 4 ½ c unbleached all-purpose flour 1 ½ tsp salt 1 Tbs baking powder 1 ¼ c milk
instructions For the whoopie pies: Preheat oven to 350ºF. Spray cake pan with baking sprayIn a large mixing bowl, cream together the butter and sugar until fluffy. My 2016 Easter Collection

Hello everyone,

I love these easy Easter egg cookies embellished with a simple bow, I made these cookies last year but due to some technical issues I didn't get to publish the video. You can see the Easter party by clicking here.

My 2016 Valentine's Day Collection

Here are this years Valentine's projects all in one place to make your life easier.

This simple heart cookie is a perfect beginner decorating project, accented with pre-made bows.

This year I decided to try cake pops for the first time ever, I was very pleased with the results.

Next I pulled out a cutter I got a few years back and made a tattoo inspired heart design.

I tested some cute cupcake liners for this cupcake project.

My last Valentine's project some giant chocolate chip cookies decorated with some chocolate ganache.

Layered Carrot Cake with Cream Cheese Frosting

I picked up this fun cake pan at my local Marshall's store and thought it would be the perfect Valentine's treat for my husband.

I created a step-by-step video for you to see exactly how I did it.

Carrot cake recipe

Sift together

230g/2cups flour
230g/2 cups sugar
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon

4 eggs
225 ml vegetable oil

450 g/3cups finely shredded carrots

Combine all ingredients in a large bowl and mix until everything is well combined.

Baking in a 350 F oven until done,  insert a toothpick if it comes out clean your cake is done. I'm not giving an exact time since this varies depending of cake pan size. (approx. 15-20 min for these pans & cupcakes)

Icing recipe

243 grams - 1 package of cream cheese
226 grams - 1/2 pound unsalted butter
131 grams - unsalted bakers margarine
Total should be 600 grams

1 - 2 tbsp light corn syrup
1 tsp of vanilla

Whip together and then add 750 grams of powdered sugar and whip again until light & fluffy.

Making Cupcake Madeleine Cookies

Today I'm trying a recipe for the first time, Madeleine cookie were a favourite of mine as a child but I've never attempted them myself. I was looking at the cake pan and found they looked like cupcakes and so I've decided to decorate them to look like exactly that. Recipe for Lemon Madeleines


3/4 cups (180 ml) all-purpose flour

1/4 tsp (1ml) baking powder

1/4 tsp (1ml) salt

2 eggs

1/2 (125 ml) sugar

zest of 1 lemon

1/2 cup (125ml) unsalted, melted & cooled room temperature

Preheat oven to 350 F degrees


Zest the lemon and set aside
Sift your dry ingredients flour, baking powder & salt
Whisk in a separate bowl the eggs, sugar, lemon zest
Pour the wet ingredients into the dry and combine once mixed pour in the butter and mix again until well combined.

Place batter in the refrigerator for 30 minutes or 5-10 minutes in the freezer

I'm always trying to come up with inventive ideas for my cookies and with the huge success of the recent launch of the Star Wars movie I thought I'd incorporate that theme in a Valentines project.
